Nori rolls with cauliflower rice




These nori rolls are super quick and easy to make!
I added activated almonds, coriander and rice vinegar to the cauliflower to help it bind together.
I think its good to have a mix of softer fillings like avocado and firmer ones like carrots... For a bit of crunch!
I used avocado, beetroot, apple and sprouted green lentils!
Gluten Free, Raw, Vegan!

Raw Goji Coconut Brownie


Chocolate fudge brownie with crunchy coconut pieces and goji berry surprises for the taste buds.
Gluten free, Raw, Vegan!


raw pumpkin pie





I love pumpkin... So it just makes sense to make it into a pie!
Those sweet little dessert pumpkins are of course ideal for this recipe, but any pumpkin will yield a great result!

The Crust 
1/2 cup brazil nuts
1/2 cup pecans
2 cups coconut flakes
8 Medjool Dates
1 Tbsp coconut oil

In your food processor with the S blade process all ingredients until it starts to stick together.
Press into a 25cm spring form pan and refrigerate.

The Filling
8 cups of diced pumpkin
8 medjool dates
4 tablespoons coconut oil
1/3 cup Maple syrup
2 tsp Cinnamon
1tsp Nutmeg, ginger and clove

In your food processor process pumpkin then add other ingredients and process more...
You could add this to the crust now for a textured filling or for a super smooth finish, transfer the mixture to your most powerful blender then set in the fridge for at least 3 hours...

I highly recommend using a quality Canadian maple syrup for that authentic sweetness... 
Alternatively you could use agave nectar or even raw honey if you prefer.

raw vegan pizza



A few years back I had my first raw pizza experience in downtown Vancouver BC...
I was really not sure what to expect when I ordered it... What came was a surprisingly tasty crust made with carrots, flaxseeds,  sunflower seeds and buckwheat! (dehydrated)
Topped with an array of organic veggies and a nut 'cheez', I was amazed at how well the flavours and textures just worked. (and how awesome and energised I felt after eating it!)

Raw pizza is now a staple on my stall and is still one of my favourite ways to get my greens!

Play around with this basic recipe to make your own raw pizza crust at home...
Then the addition of  fresh organic toppings is the key to an amazing raw vegan pizza!

Raw Pizza Crust
1 cup Buckwheat 
1 cup Sunflower seeds
1/2 cup Linseeds
1 Carrot
1 Tbsp Italian herbs
1 tsp Himalayan salt

Soak the buckwheat and sunflower seeds for 4 - 6 hours, drain and rinse well.
Process until sticky with italian herbs and salt. (food processor + S blade)
Grate carrot and grind linseeds (coffee grinder) to a fine powder, then add to mix.
Using your hands mix combine all ingredients and shape your base on a solid dehydrator sheet.
dehydrate at 42c for about 8 hours then flip onto a mesh dehydrator sheet.
Continue to dehydrate until completely dry.

You could add any flavours to the crust... like olives... or fresh herbs!
If  it seems to wet just add more ground linseeds to bind the mix together.

Birthday Cake!


Yesterday I made this raw blueberry and cream layer cake for someones special day!
I had little experience with layers, and trying something completely new on the day of the party left me slightly anxious  but totally excited at the possibility of it actually working!

The Crust is made of brazil nuts and medjool dates...
The cream layer is activated cashews, lemon juice, vanilla bean, banana, cacao butter and agave...
The blueberry layer is just that... With some orange zest, chia seeds and coconut oil...

Using the freezer I was able to rather quickly set each layer before adding the next one.
It was also handy to keep the remaining mixtures in a warm spot so they did not set on the bench and could then be more easily spread on top of the delicate layer below.

Chocolate Molten Lava Cake


I had never made a raw dessert like this before... But with a name like 'Chocolate Molten Lava Cake!'
I just knew that it would be my mission for the day to try....

The edition of cinnamon and chilli powder to the molten core is truly a warming sensation for the tongue. Oats and walnuts mixed with dates and cacao make the walls of this little mountain, with scattered cacao nibs and coconut.


Given a thumbs up from four experienced chocoholics, I think this one has real potential...

I would only try to get a bit more 0Ooz next time.

Homemade Almond Milk!


One of my favourite plant-based milks is ALMOND MILK.


  • Drinking almond milk provides us with minerals such as copper, magnesium, manganese and potassium, as well as antioxidants selenium and vitamin E.
  • On top of all that there is calcium, and without the animal protein, our bodies are able to absorb this calcium unhindered.
  • It is low in calories, containing no cholesterol or saturated fat.
  • All almond milk is naturally gluten, lactose and soy-free.
  • Almond milk tastes nothing like dairy... Offering it's own unique light and nutty flavour.
  • Almond milk is versatile and can be used in hot drinks, smoothies or just drunk by the glass.
You can make your own almond milk at home by following this simple basic recipe.

Almond Milk
1 cup Almonds (soaked for at least 6 hours)
4 cups water (filtered water would be best)

Wiz this up in your favourite blender until creamy and strain through a nut milk bag or other fine strainer... Yum!

Add a medjool date or some agave if you like it a little sweeter.

Happy Carrot Salad



This Moroccan inspired salad is so fresh and tasty... I love eating this on its own or with just about anything!


Carrots are rich in anti-oxidants and vitamin A.
I use organic juicing carrots which are usually available for less than $2.00 kg!


(serves 4 on the side)


2 heaped tablespoons of raisins
3 large carrots, grated
1 clove garlic, finely chopped
1 heaped tablespoon of mixed seeds (sesame,linseed,sunflower,pumpkin) 

1 spring onion, thinly sliced
1 tablespoon, chopped coriander 1 tablespoon, chopped mint
1/2 a red chilli, finely chopped
2 tablespoons lemon juice

2 tablespoons extra virgin olive oil salt and pepper

Plump up the raisins in hot water for 5 - 10 minutes, then drain 

Mix everything else together very thoroughly and season


Only put the lemon juice and olive oil on when your ready to Go!

Pure joy...and chocolate


Raw chocolate fudge. No sugar, just dates and cacao. Oh yeah.



There are raw vegan spinoffs of almost every junk food imaginable. The pizza crust is made with sprouted buckwheat, sunflower seed, linseed and carrots!
The falafels are made from carrot, zucchini, sunflower seeds and pumpkin seeds. Perfect for a late night kebab...

The raw revolution is exploding in the hills!


It is a pleasure to bring mostly organic raw vegan cuisine to my locals in the Dandenongs. Come and say hi at the monthly Emerald and Kallista markets, and at other events and festivals throughout the ranges.

Young Thai coconuts are rawsome


Coconut water is full of electrolytes and calcium, is good for your skin and circulation. A drink and a meal all at the same time. Can be a tough nut to crack but well worth the effort!

Green breakfast smoothie



Such a great way to start the day! Be experimental.. This is what I put in mine today..

1/2 Apple
1 Banana
10 Grapes
1 Carrot
1 Tomato
3 Kale Leaves
2 Medjool Dates
1/2 tsp Spirulina
1 tsp Maca
1 tbl Chia Seeds

Add enough water to just cover ingredients...
Whizz it up in your most powerful blender..

Lemon lavender cheezcake


This is my latest creation. Cashews are at the heart of this no-cheese cake. When soaked and ground, they become soft and creamy. Leaves a subtle lavender bouquet in your mouth...yum!

Home made rice milk



Rice milk is an easy alternative to dairy and a great addition to any vegan breakfast! Warning: this is not raw, but vegan and awesome

One cup cooked brown rice (cold)
4 cups cold water
1 date or other sweetener

Whizz this up in your favourite blender, and strain through a nutmilk bag or other cheesecloth type thing...(pantyhose will do!)

Raw vegan carrot cake!


Juicy organic carrots, cinnamon, nutmeg, cloves and dates, iced with cashew cream, and garnished with star anise. Don't be fooled into eating these pretty stars! They are a bit crunchy and hard to swallow. The cake, however, is fresh and delicious.
